Kefir, its green smoothie, the miracle probiotic that improves the immune system!
Let me start by saying how much I hated kefir, until I started doing my own! I tried it many times before, knowing that it is very healthy and great for immune system, and that’s it! Otherwise I had no idea that I could do it at home, I can mix it with my own ingredients to taste and why it is soo good for the gut and eventually immune system!
So if you are at a place like me, go ahead, let me motivate you bit about this strange drink, that becomes a yummy smoothie and support your health with each glass!
I’ll make it very simple, as you can always find more details about kefir, how to make it, and the complicated facts about gut. One very good resource, a practical one is here, if you want to read more in The Kitchn. You can find the recipe with pictures, this is how I started!
Some simple facts to keep in mind about kefir:
Kefir is made with kefir grains (yeast) and milk. It tastes like a sour yogurt and more liquid then it.
As it ferments the milk, it contains the veery healthy probiotics that we need to have everyday in order to heal our gut, which are so tired of getting rid of all the toxins we take in everyday, from sugar, processed foods, alcohol and stress!
It was originally made in the north Caucasus Mountains, to maintain the goat, sheep or cow milk, though fermentation in leather bags. I met with this drink in Azerbaijan, where I lived for 3 years and found out that it is a popular drink in the Central and northern Asia and now all over the world with the healthy living efforts.
Think of kefir like your best buddy of your gut, intestines, a system there to protect you from outside world!
Almost 80% (maybe more) of your immune system relies on your gut! Many diseases start from here and if you can heal, get out from here!
If your digestive system does not work properly, you can not get rid of toxins and then they become part of your body, causing diseases. So giving a hand to your digestive system should be part of your daily routine, seriously!
If you are intolerant to milk, if it gives you gas and discomfort, the try kefir as the fermentation process makes it easily digestible. Look what Dr.Mercola says, ” The bacteria that make the kefir or yogurt consume most of the lactose in milk, which can be a problem for someone with insulin resistance.”
It is much simpler then making yogurt and contains more probiotics, so another reason to give it a try!
If you did not like the taste of it, try adding things that make it tastier for you like herbs, sea salt, cucumber for savoury tastes or berries, banana for sweetness. Try my smoothie below!
The way to get these grains is simply asking friends who make it!

The way to make your own kefir, after you get the hardworking grains,
is simply adding some fresh milk (preferably raw and/or bio) and keeping it at a dark, warm place for about 24hours. No warming up the milk, etc like homemade yogurt.
Once these grains ferment the milk, you will see that it becomes thicker (then milk but more liquid then yogurt). Then you need to drain them in a plastic drainer, as the grains should not touch metal (otherwise gets weaker).
You can use about 1 tablespoon of grains for 2 cups of milk.
Then you can use this kefir drink as it is or for smoothies, soups, sauces, etc. Keep them refregirated.
Then you add the grains back to jar (don’t clean the jar each time as the remaining bacteria is also a good feed) and add milk again. You keep on doing it every 24 hours, depending on the weather and humidity of the place you live. If you are doing it for the first time, sometimes the first batch may not work out, don’t give up, try again.
If you are going away or simply can’t do for some days, then drain the grains, and put them into a clean glass jar with only water and keep it in the fridge until you can do it again. It can survive up to 2 weeks or so! And again if it is bit angry to you because you left it sometime, it might take a few times of fermenting until it is at peace with you again!!
And over the time, it will grow and time will come for you to share it with a friend, who values her/his health and be so grateful about this new adventure!
And here is my yummy, green kefir smoothie recipe, for your morning or afternoons, and for me I even use it for a very quick lunch on the go, when I am in a super hurry and can not eat until afternoon.
Savoury Green Kefir Smoothie
1 glass of kefir, drained
1 small cucumber, cut into big pieces (peel is on)
lettuce and any other green leaves you have like rocket, spinach, etc
Herbs like fresh mint leaves, parsley, basil, coriander (my favourite is mint)
Dried herbs like mint
1/2 teaspoon of sea or himalayan salt
Optional: turmeric, ginger, blackpepper for an anti-inflammation effect
Add some water to reach to the consistency you like
And just blend them all until smooth enough! Enjoy this as a snack or with your meals or make it an on the go breakfast! If you want to make it richer, add some chia or flaxseeds to support satiety and healthy fat-omega 3 support! Your cat may or may not like it, you must try:)) (jooo-king!)
