I don’t know why I have not cooked them before?? I think veganism makes my brain a bit softer than usual!!!
On Saturday, I made a feast for myself and the family!! Humus is already an all time favorite and it goes great with salads, veggie dipping’s and even in sandwiches as spread!
The best of all is another of my all time favorites (how many do I have??), called Mercimek Köfte in Turkish and Lentil Balls in English.
And here is the recipe…
• 2 cups red lentils
• 1.5 cup fine bulgur
• 3 onions finely chopped
• 3-4 tbps olive oil
• 1 tbps red pepper and 1 tbsp tomato paste
• 2 teaspoons red pepper flakes and black pepper
• 2 teaspoons cumin
• half a bunch of dill, parsley, mint
• 6-7 green/spring onions
• Half of lemon juice and 1 teaspoon pomegranate molasses (or some more lemon juice)
1 sauté finely chopped onion in olive oil until you reach the pinkish transparent color, add red pepper and tomato paste and stir a little more. Stir in red paprika flakes and pepper.
Wash the lentils thoroughly and boil with 3-4 glasses of water
When hot and lentils are soft enough, pour over to bulgur in a separate heat proof bowl and mix them all (together with water)
Cover and let the bulgur rise (about 30 minutes)
Finely chop the spring onions, mint, parsley and dill
When bulgur is soft enough, add the cooked onions, lemon juice and pomegranate molasses. Mix them all and knead thoroughly
If the mixture is too dry, add a little hot water, if it is too soft/liquid add some more bulgur
Add the greens at last and mix slightly
Take a size of a walnut and try to make a ball shape by squeezing gently!
You can use lettuce leaves, extra lemon slices, cherry tomatoes and also sticks(shish) for presentation
Enjoy with any type of salads, keep refrigerated in a airtight box and eat for couple of days!
The delicious dish in the picture on top is grilled aubergines (egg plants), with tomatoe-garlic sauce. Normally I eat it with yogurt but for now, it is good enough to eat only with tomato sauce:)

Saturday, we had a family sports day, doing some cano/kayaking! Created this poster-like picture for some motivation!
Did not have any headache, even had a weekend outing, with fair enough energy!!
I think I am getting used to it, yay!
