Melt the oil and add rice, water/broth in a pot and bring to a boil
Cover, reduce heat to low and cook for 15 minutes at a low simmer
Stir in the coconut milk and cook another 5 minutes
Remove from heat and steam for 10 minutes
Stir in lemon juice to taste and grated lemon peel
If you are using it as a side dish to lunch, you can season with herbs and pink salt to taste
If you are serving sweet, just mix with your usual porridge ingredients like nuts, seeds, spices except oats
