I am a happier person when I eat rice! And when I eat just right amount I can still stay fit and enjoy this delight.

Here is Another amazing recipe from Laura Plumb which you can enjoy savoury with your lunch or sweet with your fruit compotes or even as a porridge in the morning mixing it with nuts-seeds-almond milk-vegan protein powder and maple or carob syrup like a rice pudding. Or you can use it as a base and then serve with warm fruit compote.

  • 1 / 2 cups Rice
  • 1-1/2 Vegetable Broth or Water
  • 1 tsp Ghee
  • 1/4 cup Coconut Nilk
  • 1 Lemon, Grated for Its Zest and Juiced


  • Melt the oil and add rice, water/broth in a pot and bring to a boil
  • Cover, reduce heat to low and cook for 15 minutes at a low simmer
  • Stir in the coconut milk and cook another 5 minutes
  • Remove from heat and steam for 10 minutes
  • Stir in lemon juice to taste and grated lemon peel
  • If you are using it as a side dish to lunch, you can season with herbs and pink salt to taste
  • If you are serving sweet, just mix with your usual porridge ingredients like nuts, seeds, spices except oats
